Snowy Owl Cupcakes

So I took a cupcake decorating class last night. I thought I would learn all sorts of cool things about how to make icing flowers and shells and how to use pastry bags. Not so much. I am much more impressed by these Snowy Owl cupcakes that I made for Halloween a couple years ago. Coconut Cake

Happy Birthday Daddy! I was nominated to make the cake for my dad's birthday this year because I'm always looking for an excuse to bake something. And I honestly don't think I've ever baked a cake. I'm not a cake person - or at least I never was. Enter Jamie's Coconut Cake.




















The cake was so moist and delicious. I think that using coconut milk instead of regular milk really made the difference. And it was pretty easy to make. Although I could definitely use some work on my cake decorating skills...
